The Black-Eyed Susan, created as Pimlico Racetrack’s answer to Churchill Downs’s Mint Juleps, as the drink to be seen with when the Preakness is running, was originally a pre-prepared cocktail issued by the Heublein company in 1973, but when Heublein refused to divulge the recipe, Pimlico came up with its own formula. This recipe has been adapted from the official drink, and it was given to Ted Haigh, the ardent researcher, by the good folk at Pimlico.
1 ounce vodka
1 ounce Mount Gay Eclipse Rum
3/4 ounce Cointreau
1-1/2 ounces fresh orange juice
1-1/2 ounces pineapple juice
1 maraschino cherry, for garnish
1 orange wheel, for garnish
1 pineapple cube, for garnish
1 lime wedge, for garnish
Build in a collins glass filled with crushed ice. Add the garnishes.
Note: It’s imperative to squeeze the juice from the lime wedge into the drink.
